I'm having trouble getting insurance cover for an Xpeng G6 in Ireland. A lot of insurance brokers don't have the Xpeng listed.

Given Xpeng has sold several hundred examples, it must be possible to insure the car, so we can only suggest you continue to shop around various insurance companies.
In Ireland, car insurance companies get their vehicle information from the NVDF (National Vehicle Data File) provided by the Department of Transport. This is a central file used by the motor tax office, the Gardaí, etc to keep up to date with vehicle records.
